Carrot Cake recipe

A few members have asked for the delicious carrot cake recipe that Tom our treasurer has made for events so here it is… enjoy!

Ingredients

10oz gluten free blended four
1 tsp bicarbonate of soda
2 tsp baking powder (make sure hgluten free!)
1 tsp Xanthum gum
1 tsp salt
6oz suger
3 eggs
2 ripe bananas (mashed)
6oz grated carrot
6 fl oz veg / sunflower oil
pinch nutmeg / cinnamon (optional)

Method – mix all the dry ingredients then add all the wet ones except egg whites. Whisk egg whites then add last.

Pour into lined 8 inch tin and cook for 1 hour at 165 C (fan oven)

Ice with butter icing
