Ingredients

  • 50g (2oz) butter
  • 25g (1oz) demerara sugar
  • 1 level tbsp (15g) honey or golden syrup
  • 50g (2oz) roughly chopped mixed nuts
  • 50g (2oz) glace cherries
  • 25g (1oz) mixed peel
  • 50g (2oz) gluten free flour*
  • Pinch of baking powder*
  • 75g (3oz) plain cooking chocolate*

Method

  1. Melt butter with sugar and honey/golden syrup very gently until sugar is melted

  2. Add nuts and fruit and cook slightly before adding flour and baking powder

  3. Put spoonfuls of the mixture about 4cm (11/2 inches) apart on a well greased baking sheet and flatten slightly

  4. Bake for 15 minutes at 160°C/325°F/Gas Mark 3

  5. When cool, cover base with melted chocolate and decorate by marking wavy lines with a fork.
