Ingredients
- 50g (2oz) butter
- 25g (1oz) demerara sugar
- 1 level tbsp (15g) honey or golden syrup
- 50g (2oz) roughly chopped mixed nuts
- 50g (2oz) glace cherries
- 25g (1oz) mixed peel
- 50g (2oz) gluten free flour*
- Pinch of baking powder*
- 75g (3oz) plain cooking chocolate*

Method
Melt butter with sugar and honey/golden syrup very gently until sugar is melted
Add nuts and fruit and cook slightly before adding flour and baking powder
Put spoonfuls of the mixture about 4cm (11/2 inches) apart on a well greased baking sheet and flatten slightly
Bake for 15 minutes at 160°C/325°F/Gas Mark 3
When cool, cover base with melted chocolate and decorate by marking wavy lines with a fork.
