Halloumi Curry

Vegetarian Halloumi Curry recipe with lots of protein and low on carbs. Easy to make and perfect for lunch or a light dinner.

Ingredients

  • 675g halloumi cheese
  • 90ml olive oil
  • 9 cloves of garlic
  • 3 red onions
  • 3 red peppers
  • 7.5g salt
  • 7.5g ground turmeric
  • 7.5g ground turmeric
  • 7.5g cumin seeds
  • 1.5 lemon

Method

  1. Preheat the oven to Convection 220 °C. Cook the halloumi with 30 ml oil on the enamel tray in the middle shelf position on Convection 220 °C for 15-20 minutes. Set aside on a plate.

  2. Add 30 ml oil, garlic and onion to casserole dish cover and cook on High Microwave Power for 2 minutes. Add the red pepper, salt, turmeric, cumin seeds, lemon zest, juice and 300 ml water. Stir and cook for a further 10 minutes on High without a lid.

  3. Remove from oven and use a stick blender to puree the mixture into a smooth paste, add the fried halloumi and heat on High Microwave Power for 1-2 minutes.
